Mr. Boxy
When you're really stressed, you trigger your body's fight-or-flight response. In this mode, your body is ready to quickly react to a threat.

Adrenalin, noradrenaline, and cortisol enter your blood stream, increasing your heart rate, changing your level of concentration, and setting up your liver to rapidly process glycogen into glucose to fuel cells. This gives you the energy and excitement associated with the fight-or-flight response, but there's more at work here.

Your body is also slowing down things that aren't necessary for surviving an attack, and since talking isn't effective at avoiding killer beasts, your saliva glands, as well as the rest of your digestive system, are included in this temporary shutdown. This is why people "choke" when they get nervous talking in front of people: They're under enough stress to trigger a fight-or-flight response, which gives them dry throats.
